Colorful cauliflower pepper edamame stir fry- vegan, gluten free

  • Blender to grind edamame

Ingredients
  

  • 1 cauliflower chopped into big pieces
  • 2 cups chopped peppers of your choice can use bell peppers or sweet mini peppers
  • 1 cup frozen edamame coarsely ground
  • 1/2 cup frozen edamame to mix in
  • 1/4 cup red onion sliced
  • 2 crushed garlic cloves
  • 1/2 tsp cumin powder
  • 1/2 tsp corainder powder
  • 1/2 tsp chili powder
  • 1/2 tsp turmeric
  • 1 tsp pepper powder
  • 1 stem of cilantro finely chopped
  • 1 tsp salt to taste
  • 1 Tbsp avocado oil - if using cold pressed

Instructions
 

  • Chop cauliflower, peppers and set aside
  • Take the frozen edamame, let them sit outside for 10 min and add about a cup to a blender jar to coarsely grind. you can set some edamame beans on the side for adding at the end.
  • In a skillet or wok, add oil (if using) or few Tbsp of water. Once hot, add garlic, onions, let cook for 2-3 min. Add cauliflower, chopped peppers. Let them cook for 4-5 min. Then add the turmeric, pepper powder, chili powder, cumin and coriander powders. Mix well. Add the ground edamame (gives a texture) followed by whole edamame (gives a nice bite). Add salt per taste. Stir all ingredients. Cover and cook for 3-5 min. Garnish with cilantro and sesame seeds.
    Serve with hot rice, or roti /flatbread. Add it to even salads to add little spice and color.

Notes

*You can add ginger as well before the onion for extra flavor.
