Healthy Leftover rice and oats waffles- vegan, gluten free

A fun, kid favorite way to use the left over rice, along with wholesome oats to make light crispy waffles

Equipment

  • High speed blender
  • Waffle maker

Ingredients
  

  • 2 cups Gluten free rolled oats
  • 2 cups left over rice at room temperature
  • 3 Tbsp chickpea flour
  • 1 medium ripe banana
  • 1 tsp baking powder
  • 1 tsp cinnamon powder
  • 3 cups plant based milk
  • 1 Tbsp date sugar or coconut sugar optional
  • 1 tsp vanilla extract optional
  • 1 tsp flax powder optional

Instructions
 

  • Get your waffle iron heated up and ready.
    Get your toppings, syrup/sauces ready to go.
  • Add all the ingredients to a highspeed blender. Blitz for 45 sec until smooth batter is formed.
    The batter should be slightly runny. Add few extra Tbsp of plant based milk if needed.
  • Pour the batter directly on the waffle iron. Make your waffles.
  • Top them with flavors and fruits of your heart's choice. We made just berries with strawberries/blueberries, the nutty with banana pecan with chia, and the raspberry in chocolate drizzle.
