I tried to make an easy, healthier twist while keeping the portion in size and adding more protein, healthy fat and nutrients to the morning comfort food, the bagel.
Scoop the avocado in to a bowl. Add pinch of salt, black pepper and lemon juice, and mash into smooth paste.Add chili powder, salt to beaten eggs and cook them well on a non stick skillet like an omelette. Cut the omelette to size of mini bagels. Have the frozen corn toasted and chop the green onions, cilantro.Slice the mini bagels, toast them. Layer the avocado mixture and then add the cooked egg. Follow it with corn, green onions, cilantro and while still warm, grate the cheese of your choice on the top.Serve warm.
