Busy mornings where breakfast gets neglected are so common. Breakfast cereals, oatmeal, PB &J sandwiches, toast, are easy to go family options for the weekday mornings. What if, simple toast is upgraded and loaded with nutrition, with less effort?

Healthy, simple toast topped with goodness to brighten your morning

Equipment

  • Toaster
  • Egg cooker optional

Ingredients
  

  • 4 Whole wheat bread slices multigrain or sprouted bread is even better
  • 1 Medium ripe avocado sliced
  • 2 egg whites cooked diced
  • 1/2 cup any green sprouts I used moong sprouts
  • 1/4 cup grated carrot
  • 1 tbsp lemon/lime juice fresh
  • 1/2 tsp black pepper
  • 1/2 tsp salt
  • sliced, sauteed Red onion optional
  • diced sauteed bell pepper optional

Instructions
 

  • Boil whole eggs, have egg whites ready and diced.
    Take avocado slices in a bowl, add the salt, black pepper, lemon juice. Layer the avocado on the toast.
    Toast the bread per your preference. I like to cut the crusts away . Lay them on a plate side by side.
    Next, take the egg whites and layer on top of the avocado on the bread slices.
    Follow it by layer of any green sprouts, home made or store bought. I will post how to make home made moong sprouts very soon
    Add grated fresh carrot on the top. You can add more salt, pepper, lime juice at this time on the top
    Enjoy the freshness with a crunch with your morning coffee

Notes

*If you have time, you can saute sliced onions, bell peppers, corn, and any other vegetable of preference to add on the top.
