No oil Homemade Herby Hummus- Wholefood, Plant based

Hummus is a wonderful protein loaded, easy to make dip that can eaten by the spoonful if need be. Chickpeas the main ingredient of hummus are rich in protein and fiber. The problem with store bought hummus is the addition of oil, lots of salt and other unnecessary ingredients. Traditionally hummus is made with tahini (sesame seed butter), blended with chickpeas. Tahini, if store bought contains oil or salt in most cases.

Regardless, without the store bought tahini, we can make yummy and healthy hummus starting from whole sesame seeds. Fresh, Fragrant and Flavorful- are the main traits of this hummus. Addition of multitude of herbs, gives the added advantage of phytonutrients from the greens. The hint of spice from jalapeno pairs well with the garlic and herbs. If desired, a few slices of avocado will make this even hearty.

All it takes is under 10 min and, you will be amazed at how easy it is to make the healthiest version of hummus, sans the store bought tahini, or oil and even salt if desired.

No processed ingredients ..period. Wholefood plant based hummus with lots of herbs and hint of spice.

  • High speed blender

Ingredients
  

  • 15 oz chickpeas (1 can rinsed drained) or can use equal amount cooked chickpeas
  • 1/2 cup sesame seeds
  • 1 lemon – juice to be squeezed
  • 3 medium garlic cloves
  • 1 deseeded roasted jalapeno
  • 1/4 cup chopped cilantro or handful of cilantro
  • 10 basil leaves
  • 10 mint leaves
  • salt to taste- optional
  • 1/4 avocado- optional for extra creaminess
  • 4 oz ice cold water

Instructions
 

  • Take a small pan and on low heat, dry roast the sesame seeds carefully. Make sure they don't burn. In about 6-8 min, roast them until crunchy and light brown in color.
    Add these sesame seeds to the blender. In the same pan, roast the deseeded jalapeno (can use fresh green chili instead).
    Now add the chickpeas (either canned or freshly cooked). Add garlic cloves, and all the herbs.
    Then add lemon juice.
    Now start on low and blend for a few seconds until some sesame seeds are ground. Then add half of the ice cold water. Blend at medium speed for about 30 sec.
    Now add rest of the water and if desired avocado. Blend on high for another 45 sec.
    Add salt per taste.
    Take into a serving bowl, and enjoy with varied foods from raw veggies to whole grain pita.
