Vibrant Chipotle Tofu

Ingredients
  

Marinade

  • 1 Tbsp Tomato paste
  • 2 large limes squeezed fresh
  • 1 Chipotle pepper in adobo sauce (sold in cans in grocery store) can substitute with 2 red dry chili peppers
  • 1 tsp Cumin powder
  • 2 tsp Garlic powder
  • 1 tsp Onion powder
  • 1 tsp paprika powder
  • 1 tsp red chili flakes
  • 1 tsp salt
  • 1/4 cup water

Tofu

  • 15 oz Extra firm tofu (water drained )

Instructions
 

  • Take a blender jar and add all the marinade ingredients to make a nice, vibrant, red, runny paste.
    Once the tofu is drained off water, cut into shapes of your desire. Put them in a wide bowl and add the marinade. Use a spoon or your fingers, to ensure the tofu pieces are coated well with marinade on all sides. Let them be in that bowl for 30 min. Stick the bowl in the fridge during this rest time.
    Then on a baking tray lined with parchment paper, bake the tofu pieces for 15 min at 400 F, while flipping the pieces midway.
    Alternatively, you can pan fry these marinated tofu pieces on a non stick pan. Add any extra leftover marinade at the end of frying.
    Serve warm with salsa or add in tacos, burritos .
