The tedious part of this recipe, is the cutting of berries which takes up most of the 10 min process. Pit the cherries by pushing with a strong straw through the center. Then start chopping the rest of the berries into fairly even pieces. Add a bit of the usual pico de gallo ingredients and let the mixture sit in fridge for 10 min, if you can be patient and want to get the best taste out of it. We could not wait digging in right after we made this bowl of the very merry pico de gallo with cherries and berries.

Very Berry & Cherry Pico de gallo

Super chic and merry pico de gallo with cherries and berries, to jazz up your plate and palate.

Ingredients
  

  • 15 pitted fresh cherries – chopped
  • 1/4 cup blue berries- chopped
  • 5 strawberries- chopped
  • 8 black berries- chopped
  • 1 jalapeno- deseeded if preferred – finely chopped
  • 1/4 cup finely chopped red onion
  • 4 cherry tomatoes- chopped finely
  • 1/2 lime to squeez fresh juice
  • 1/4 cup cilantro finely chopped
  • 1 tsp salt to taste
  • 2 pinches black pepper

Instructions
 

  • If you have a manual food processor, the kind with a pull string, it will help a lot to chop the onions, tomatoes, jalapenos finely.
    Otherwise, use a sharp knife and chop on all the ingredients.
    Add them all one by one to a mixing bowl. Finally add the lime juice, salt, pepper and toss gently. Let the mixture sit for 10 min for the flavors to blend nicely .
    Scoop up with nachos, or lettuce cups or add in tacos, burritos.
    This pico de gallo is best eaten in a day or two, as it might get more watery. So, make it fresh for parties.
