Magical Fruit and nut Panipuri
The street food that undoubtedly reigns the heart of Indians, is the cute beloved panipuri, a humble crepe made out of semolina. Traditionally, it is stuffed with potato/chickpeas, tamarind chutney and then filled with tangy, minty water with a base of cilantro . The minute you put it in your mouth, you will witness an explosion of flavors from a thoughtful mix of simple ingredients. Panipuri /golgappa is like a blank canvas and you can experiment with varied stuffings and liquids to fill with.
This recipe was inspired by and created for all the kids whose imagination and resilience remain limitless, no matter how unreal ‘school’ has become amidst COVID 19.
The joy and ‘wow’ this recipe brought on my kids faces was priceless. Simple to make, exciting for the kids who can mix and match, have fun in their own panipuri lab.
Magical Fruit and Nut Panipuri
Equipment
- Blender
- Citrus juicer
Ingredients
For the Mango Pistachio stuffing
- 1/2 cup Mango cut into small pieces
- 2 Tbsp pistachios toasted chopped
- 1/2 teaspoon chaat masala optional
For the Chocolate Almond stuffing
- 3/4 cup semi sweet chocolate chips to melt in a bowl
- 2 Tbsp slivered almonds chopped I used toasted slivered ones
For the Banana Walnut Caramel Stuffing
- 1 firm medium ripe banana cut into small pieces
- 2 Tbsp walnuts cut into small pieces toasting is optional
- drizzle of caramel syrup
For the Green pani (water)
- 1 cup chilled water
- 1/4 cup mint leaves
- 1/4 cup cilantro chopped
- 3/4 tsp panipuri masala
- 2-3 ice cubes to grind with
For the Pink pani
- 6 Strawberries
- 3/4 tsp panipuri masala
- 1/4 cup mint leaves
- 3/4 cup water chilled
- 2-3 ice cubes to grind with
For the Orange pani
- 3/4 cup Orange juice- fresh squeezed or store bought without pulp squeeze using citrus juicer
- 3/4 tsp panipuri masala
- 2-3 ice cubes to grind with
- 1/4 cup mint leaves
PaniPuris/Golgappas
- 1 box pre made store bought or dried ones that you can air fry at home
Instructions
Mango pistachio mix
- Add chopped mangoes, pistachios to a bowl and a pinch of chaat masala, if you chose to. Mix and keep aside.
Banana walnut caramel mix
- Add chopped walnuts, bananas to a bowl, drizzle caramel sauce and mix gently. Try to keep them around same size, so that it is easier to bite into.
Chocolate almond mix
- Melt chocolate chips on stove top in a double boiler (place chocolate chips in a bowl. Place the bowl in a pan with water on low heat). Add in the chopped almonds and keep aside.
Green pani
- Blend cilantro, mint leaves, panipuri masala, with added ice. Then strain into a bowl and add chilled water.
Pink pani
- Add strawberries, mint leaves, panipuri masala, ice cubes to blender jar and blend. Take the mixture into a bowel, and add chilled water to desired consistency.
Orange pani
- Blend mint leaves, panipuri masala, ice cubes, orange juice together. Strain if needed. Take it into a bowl.
Puris
- If using the dried panipuris that need to be fried, you can air fry at 365 F for 2 min. Pre made boxed panipuris are ok too. Just be sure, there are enough on stock, as the kids will love the panipuri buffet.
The perfect combinations from my family taste testers-
- Chocolate almond was great with orange pani.Mango pistachio was the top rated one and was perfect with green pani.Banana walnut was best suited for pink pani.But do experiment and leave me feedback.
For the 'wow' effect
- I added 1/2 tsp dry ice to the different colors of liquids right before unveiling my creation to my kids. Caution while using dry ice- mentioned in notes.
