Savory Cauliflower oats mini pancakes
As Mark Twain said “Cauliflower is just a cabbage with college education”, cauliflower and cabbage both belong to the cruciferous family and have very low carbohydrates but a high amount of vitamins and minerals.Boiling cauliflower destroys its nutrients by almost 70% if done for about 30 min. To preserve its power, the easiest and best way is to saute the cauliflower.

Cauliflower savory mini pancakes
These are light, nutritious quick snack, enjoy their uniqueness.

Ingredients
- 11/2 cup Organic Cauliflower florets
- 1 cup Quick oats
- 2 tbsp Rice flour
- 1 tbsp All purpose flour
- 1 tbsp Organic Yogurt coconut milk for vegan substitute
- 1/2 tsp Cumin powder
- 1/2 tsp Coriander powder
- 1/2 tsp Chili powder
- a pinch Turmeric powder
- 1/2 tsp Ginger grated
- Salt to taste
Instructions
- Coarsely grind the cauliflower florets and oats together. Take into a bowl, and add all other ingredients as above and mix into a batter. Let it sit for 10 min. Now, on a griddle, make small pancakes and fry them.
- Serve hot with sweet and sour sauce, ketchup or any vegetable chutney.
Notes
*Onions, green chilies, and cilantro can be added as well to the batter. This is optional. You can skip the yogurt and add coconut milk instead for a vegan option.
