Delicious Mini Bagel Avocado,Egg and Cheese bites
Bagels which originally came from Poland with Jewish immigrants to United States somewhere in 16th century ,are made from yeasted dough that is boiled, then baked , which enables them to stay fresh for longer period than fresh baked bread. The process also gives them an outer sheen and a crunch. Centuries later came the cream cheese in 1900’s , and the combo stands a hit to this date.
Mini Bagel Avocado Cheese Egg bites
I tried to make an easy, healthier twist while keeping the portion in size and adding more protein, healthy fat and nutrients to the morning comfort food, the bagel.
Equipment
- Toaster for bagels
Ingredients
- 4 Mini Bagels whole wheat
- 2 Eggs beaten in a bowl
- 1 Avocado
- Lime Juice Per taste
- Grated Cheese as topping
- 1/4 tsp Paprika or Chili Powder
- Salt to taste
- Green Onions
- Toasted Corn
- Cilantro
Instructions
- Scoop the avocado in to a bowl. Add pinch of salt, black pepper and lemon juice, and mash into smooth paste.Add chili powder, salt to beaten eggs and cook them well on a non stick skillet like an omelette. Cut the omelette to size of mini bagels. Have the frozen corn toasted and chop the green onions, cilantro.Slice the mini bagels, toast them. Layer the avocado mixture and then add the cooked egg. Follow it with corn, green onions, cilantro and while still warm, grate the cheese of your choice on the top.Serve warm.
