When it comes to dessert, natural sugars, as those present in fruits are the healthiest ones to indulge in for optimal health. Holidays are notorious for use of refined carbohydrates as in white flours/sugars, which add fuel to the fire in people prone to or suffering from chronic diseases such as diabetes, heart disease and even cancer.

So this, easy, super cute ‘love bites’ as we named them, are created to encourage kids preference for natural sugars and to chose abundant delicious fruits available in the nature. Extremely simple to make, even by kids, this dessert beats cravings for candy and has a lot of room for creativity to try different combination of fruits.

Your choice of colorful fruits, cut in similar sizes, with a few of them dipped in dark chocolate to serve a indulging middle layer, make a sweet and healthy fruit two bite sandwich.

After all, empowering your loved ones, especially kids to make healthy choices and nourishing their health is one of the best valentine gifts.

Fruity-Choco Love Bites.

A very inviting, easy combination of fruits with a thin layer of dark chocolate in the middle, to let you indulge in a healthy way.

Ingredients
  

Fruits that you can use-

  • medium ripe pineapple cut into small circles or in shapes with a cookie cutter, about 1/2 inch thick *can grill the pineapple slices if preferred.
  • nice plump strawberries cut in slices ,same size as pineapples
  • green apple sliced transversely, and trimmed to size of pineapples
  • blueberries or raspberries or black berries or grapes to add on the top

Chocolate

  • 1/2 cup dark chocolate chunks- unsweetened, vegan preferred See notes

Instructions
 

Prepare fruits

  • Cut the pineapples, strawberries, green apples in similar size, with a knife. Using a cookie cutter lends extra special shapes to these delicious bites.

Melt chocolate

  • In a double boiler, melt the dark chocolate chips of your choice. You can even microwave the chocolate chips in a 30 sec increment until mushy and then just keep stirring. The rest of the chocolate chips will melt with residual heat.

Assembly

  • Dip the strawberry and green apple slices on one side in the melted chocolate. Put these slices, chocolate side up on a plate with parchment paper. Stick them in the freezer for 20 min.
  • Now layer the fruits, starting with pineapple slice on the bottom, followed by strawberry, then green apple slice that are layered with chocolate. Place another pineapple slice on the top. Use a toothpick poked into a blueberry or raspberry or blackberry or a grape, to hold the fruit slices together.
  • Enjoy them right away or save in the fridge until ready to consume. Make them by the dozen, as they will be gone very soon, once served.

Notes

If you are not keen on chocolate, go ahead skip it and add nut butter of your choice. Or just enjoy stacked up fruit.
For elevated flavor, grill the pineapple slices before stacking the fruits.
You can even use mango slices in combination with pineapple. For even more exotic combination add a slice of dragon fruit in the middle.
