Pure Blissful Berry & Carrot smoothie-vegan
One thing I always have in my fridge – carrots including baby carrots. They are nutritious, excellent source of Vitamin A (1/2 cup gives you 73% of your daily dose Vit A), plus they last long in the fridge, are available year round, are loved by kids and the recipes that can be made with carrots are endless.
Berries add the phytonutrients that have antioxidant properties. Also they are rich in fiber and many micronutrients. Orange adds the brightness, along with 85% of your daily Vitamin C dose, and fiber.
The berries, oranges, and pineapple for that tropical taste, work perfectly with carrots in a convenient smoothie for better health.
This smoothie is a quick way to load up a whole cup of carrots into an afternoon snack or even breakfast. Just the goodness of carrots and fruits with no added sugar , this is definitely worth a try to enjoy a tasty, simple way to get your daily dose of veggies, fruits.
My little trick- whenever I blend carrots into a smoothie, is to add pineapple and/or orange to make it taste more kid friendly.

Ingredients
- 1 cup baby carrots or chopped carrots organic
- 2 cups chopped pineapple
- 1 orange peeled / chopped
- 1/2 cup blue berries can use any berries of your choice
- 1/2 cup strawberries
- 1/2 cup plant based milk of your choice optional- adds more creaminess and makes it a substantial snack/breakfast
- 1/2 cup ice cubes
Instructions
- Add all the ingredients to the blender and blend for 45-60 sec until smooth mixture is noted. You can skip ice and just use frozen fruit. Play with combination of berries and find the one that works for your taste. The pineapple , orange mix are essential in my view when blending carrots for the deliciousness. Drink fresh and enjoy the nutrition benefits.
