Healthy Quinoa pasta with no mess grilled chicken breast
Pasta, the one dish I can get kids to eat without a fuss, the one dish that is easy to make, makes one complete meal by itself and is just comfort food. Pasta, is very much Italian, but historically felt to have come to Italy from Asian countries around 13th century and is actually inspired by noodles. Equipment
- Blender to make tomato puree
- Parchment paper for chicken breast
Ingredients
Pasta
- 2 cups Quinoa Pasta Organic
- 1 medium Onion Finely Chopped
- 4 cloves Garlic Finely Chopped
- 3 Tomato Pureed,Strained
- 1/2 tbsp chili powder
- 1 tbsp Salt for boiling pasta
- 1 tbsp Salt for cooking pasta
- 1 tbsp Oil for boiling pasta
- 2 tbsp Oil for cooking pasta
- Basil or Oregano for garnish
- 1/4 cup Fresh Cream
Grilled Chicken Breast
- 2 Chicken Breast Tenders
- 2 Parchment Papers
- 1/2 tbsp chili powder
- 1/2 tsp Turmeric
- 1/2 tsp Salt
- Touch of oil/butter to coat parchment paper
Instructions
Boiling Pasta
- In heavy bottom pan, add water, salt, oil, bring to boil. Then add quinoa pasta , cook for 90%, and strain the water. Keep pasta aside.
Cooking Pasta
- In a pan, heat oil, add garlic, then onions. Add tomato puree and let it cook for 4-5 min. Then add chili powder, salt. Add the pasta let it cook in sauce for 3-4 min. Add oregano/ basil. Add cream if interested and turn the stove off.
Grilled Chicken
- For the grilled chicken breast, simply take a parchment paper, fold it like a piece of paper. Coat the inside of the paper slightly with oil. Sprinkle salt, chili powder, turmeric, and any other spices you might like. Take the chicken breast , slightly beat it with back of kitchen knife to flatten and reduce the thickness of meat. Now place the chicken in the parchment paper. Press the parchment paper edges together and put it on a hot skillet . Flip the paper after 3-4 min , and chicken should be ready in 6-8 min.
- Serve the pasta with some salad and the grilled chicken breast.
Notes
* Follow the al dente time for cooking pasta on your pasta packaging.
* Use unbleached good quality parchment paper.
