Ragi & Oats banana waffles- vegan, gluten free, allergen friendly
Breakfast is the important meal of the day, especially if you have kids and it is vital to give them the nutritional power in the first meal of the day. The challenge for me is always to find ways to include those nutritious ingredients that my kids naturally resist just by looking at it. Ragi is one of those ingredients in my house.
So, to tone down the very earthy ragi flour, I added oats, and raw cacao. For natural sweetness, I added banana and topped with berries. I kept it plant based and avoided dairy, eggs as well. The waffles were just right amount of sweetness, soft, fluffy and more importantly, my kids plates were empty without a single sigh:) Try it for a fun filled weekend morning.
Ragi oats banana waffles – vegan and gluten free
The goodness of ragi and oats with sweetness of banana in a kid friendly recipe.
Equipment
- Blender
- Waffle maker
Ingredients
- 1/2 cup ragi flour
- 1/2 cup oat flour grind old fashioned or steel cut oats in a blender
- 3/4 cup plant based milk- I used soy milk
- 1 whole ripe banana chopped
- 1 tsp vanilla extract
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp flax meal
- pinch of salt
- 2 tsp raw cacao powder optional
Instructions
- Heat your waffle iron. Add all ingredients to a blender and blend into a smooth paste for 20 sec. Take the batter into a bowl.Spray a bit of oil on your waffle iron.Add the batter to the waffle maker and use the appropriate setting per your machine.
- Once done, serve your waffles with maple syrup/ date syrup and fresh berries. A thin layer of melted chocolate will make the kids want more:)
Notes
Add nuts to the batter, if no worries about allergies.
You can serve with honey as well- ( will not be vegan).
