It adds loads of plant protein, calcium and isoflavones from soy that have so many health benefits. The blandness and easy texture of tofu makes it a great vehicle for varied flavors that originate in myriad cuisines.
Tofu scramble, if you follow the recipe below, will be the closest imitation of egg scramble. The Basic Tofu Scramble
Ingredients
- 7 oz extra firm tofu- drain the excess water
- 1/ 4 red onion chopped finely
- 1 green chili or jalapeno – finely chopped
- 2 tbsp nutritional yeast
- 1/2 tsp turmeric powder
- 1/4 tsp black salt
- 1 tsp salt
- 1 tsp black pepper powder
Instructions
- In a saute pan, once hot, add 1-2 tbsp of water in place of oil. Then add onions, chilies. Once onions are softening, just hold the tofu block in your hands, and with all your heart crumble it into the pan. Ensure that there are no big chunks randomly.Then add the turmeric powder and nutritional yeast. Mix well for one minute. Add black salt (found in Indian stores), regular salt, black pepper powder. Mix intermittently to prevent sticking of tofu to the pan. Once you see that all moisture has almost disappeared and tofu is starting to have more firmness with a touch of slight browning, turn the stove off and take the tofu scramble into a serving bowl. Variations- 1. Add number of veggies like carrots, bell peppers, broccoli peas, corn, right after the onions and wait a few minutes before adding tofu. 2. Add different herbs ( cilantro, basil, mint, oregano)3. Spice up with garlic, garam masala, zaatar, harissa paste, etc.
