Talk about the latest sweet potato usage in my kitchen. What could not be done with it? A wonderful starchy vegetable with lower glycemic index than regular potato, is amazing to use in curries, stir-fries, baking recipes, even smoothies, soups and my latest discovery is this cookie dough. If I can substitute any processed ingredient, high glycemic index food with sweet potato in my recipes, I call it a straight no contest win, nutrition wise.

This recipe was born on a Thursday evening, after a long work day, with a mission to just eat one spoonful of an indulgent dessert responsibly. I used a mix of oat, almond flour with the creamy sweet potato, along with sweetness of dates, maple syrup, under the dark inviting color of cacao to make these balls of goodness. At this stage once the sweet dark mixture is warm and ready, we were just eating it with our fingers dipped in the doughy mixture. But to make it more decadent, I dipped these dough balls in melted dark chocolate , which was a perfect chocolate indulgent treat, for the kids.

All it takes it possibly 2 hours including cooling time, and if you use the freezer, you can cut the time by another 30 min.

Healthy ingredients, come together with no added refined sugar to make an indulgent cookie dough dessert.

Ingredients
  

  • 3/4 cup oat flour or coarsely ground steel cut oats
  • 1 cup sweet potato cooked and sliced thin
  • 3 medjool dates pitted and chopped
  • 1.5 cup oat milk, can use almond or soy milk
  • 3 Tbsp almond flour
  • 2 Tbsp maple syrup
  • 2 tsp dark cacao powder
  • 1 tsp vanilla extract
  • pinch salt

If making cookie dough truffles- optional

  • 1 cup dark or unsweetened chocolate chips melted

Instructions
 

  • In a heavy bottom pan, add the oat flour or coarsely ground steel cut oats, along with dates, sliced sweet potatoes and oat milk.
  • On medium heat, let the ingredients cook, with gentle stirring.
  • About 10 min later, you should see the dates soften, the dough coming together. At this stage add the almond flour , maple syrup , cacao powder and mix well.
  • Add the vanilla extract, salt, and any other spices you desire such as cinnamon.
  • With the flat surface of a wooden spoon, mash through the mixture.
  • Once a slightly gooey dough is formed, turn the stove off, and let it cool in the fridge for at least 30 min prior to eating it .

Cookie dough truffles

  • You can enjoy the healthy cookie dough by itself, but if you want to take it a step ahead, and make it super hit with kids, do read below.
  • Melt chocolate chips, either by double boiler method or in microwave in short bursts of 15 sec for up to 60-90 sec.
  • Make small balls with your hands using the made cookie dough and dip them in the melted chocolate.
  • Let them cook in fridge for up to two hours or in a freezer for 45 min.
  • You can use chocolate sprinkles, nuts, hemp hearts, chocolate chips, in the dough or in the outer chocolate layer for extra crunch and excitement.
