No matter what ingredients are in the pantry, the efficiency of minimizing food waste and maximizing the potential of cooked food is always a blissful kitchen achievement. Rice is a daily cooked staple in my kitchen. My encounters with left over rice usually result in a dish of myriad flavors of fried rice or some sort of stir fry with veggies, but I usually never step beyond that comfort zone. Think about the oil, sauces, salt etc that need to be added to make fried rice. I was looking for a better alternative that is easy, exciting, and definitely healthy. Also, leftover rice ( rice that was cooked then cooled) is rich in resistant starch than freshly made rice. Resistant starch does not get broken down to glucose, and instead feeds the gut bacteria yielding us a variety of health benefits.

One day, after being fed up with making rounds of fried rice during a previous week, I decided to just play with the simplest ingredients I have, trying to make a delicious breakfast, in which it is hard to recognize the rice. After two failed attempts, the ratios finally worked and these light crispy healthy wholefood plant-based waffles were born. Since that day, I have made these at least 5 times, before putting this recipe on the blog. It is a fact that my kids now look forward to left over rice these days, anticipating waffles for breakfast the next day.

Fiber rich oats, leftover rice , with the sweetness of banana and few optional flavors, not a drop of oil, these waffles are made in a breeze, by just dumping the ingredients in a blender. Once done, top them with loads of berries, or nuts , chia seeds, and of course dark chocolate for the chocoholics. I promise, left over rice is the last thing you will taste in these super healthy, exciting waffles. Redundancy should have no place in healthy.

A fun, kid favorite way to use the left over rice, along with wholesome oats to make light crispy waffles

Equipment

  • High speed blender
  • Waffle maker

Ingredients
  

  • 2 cups Gluten free rolled oats
  • 2 cups left over rice at room temperature
  • 3 Tbsp chickpea flour
  • 1 medium ripe banana
  • 1 tsp baking powder
  • 1 tsp cinnamon powder
  • 3 cups plant based milk
  • 1 Tbsp date sugar or coconut sugar optional
  • 1 tsp vanilla extract optional
  • 1 tsp flax powder optional

Instructions
 

  • Get your waffle iron heated up and ready.
    Get your toppings, syrup/sauces ready to go.
  • Add all the ingredients to a highspeed blender. Blitz for 45 sec until smooth batter is formed.
    The batter should be slightly runny. Add few extra Tbsp of plant based milk if needed.
  • Pour the batter directly on the waffle iron. Make your waffles.
  • Top them with flavors and fruits of your heart's choice. We made just berries with strawberries/blueberries, the nutty with banana pecan with chia, and the raspberry in chocolate drizzle.
